Chicken Wraps

Sauteed chicken and onion combined with sharp cheddar cheese, plum tomatoes and avocado.
Ingredients -
2 tablespoons Extra Virgin Olive Oil
2-½ Boneless, Skinless Chicken Breasts, cut into one half inch pieces
1 small White Onion, chopped
1 package Taco Seasoning
1 (16 ounces) carton Sour Cream
2 cups Sharp Cheddar Cheese, shredded
2 Fresh Plum Tomatoes, chopped
1 Avocado, peeled, pitted and diced
1 small Head of Romaine heart lettuce, shredded
8 Burrito Size Flour Tortillas
 
Preparation:

1. Add vegetable oil to a large skillet. Heat over medium heat.

2. Sauté chicken and onion until chicken juices run clear, and onion is tender.

3. Remove from heat.

4. Transfer chicken and onion mixture to large bowl. Stir in taco seasoning, sour cream, cheddar cheese, chopped tomatoes, diced avocado, and romaine lettuce.

5. Place equal amounts of chicken mixture across center of tortillas.

6. Roll tortillas up and slice crosswise diagonally.
