Sourdough Veggie Sandwich

Sourdough bread topped with cheddar cheese, zucchini, tomato, carrot and sunflower seeds. Sandwich is brown in a skillet until bread is brown and cheese has melted.
Ingredients -
2 tablespoons Mayonnaise
4 slices Sourdough Bread
1 cup shredded Cheddar Cheese
2 small Zucchini, halved lengthwise
1 large Tomato, thinly sliced
1/4 cup shredded Carrot
1 tablespoon Salted Sunflower Kernels
2 tablespoons Butter, softened
 
Preparation:

1. Place sourdough slices on work surface.

2. Spread mayonnaise on top of each slice.

3. On 2 slices of bread, layer cheddar cheese, zucchini, tomato, carrot and sunflower kernels.

4. Place remaining bread slices on top, mayonnaise side down.

5. Spread butter on top of bread, flip and butter bottom.

6. Preheat skillet over medium heat.

7. Toast bread on both sides to desired doneness.

Zucchini can be found year round at your favorite supermarket or farmers market. The soft skinned vegetable will be smooth, glossy, and free of bruises. The exterior will be waxy to the touch.

Tomato
Tomatoes should be stored at room temperature and not in the refrigerator if possible. The cold temperatuire in the refrigerator causes the tomatoes to get mushy and lose flavor.
