Loaded Avocado Sandwich With Chipotle Cheddar

Sauteed mushrooms and onions, chipotle cheddar cheese and ranch dressing served on sourdough bread. Broiled and topped with avocado and alfalfa.
Ingredients -
1 cup sliced Mushrooms
1/2 cup chopped Onions
1 teaspoon Oil
8 sliced Sourdough Bread
1/2 cup Ranch Dressing
8 slices Chipotle Cheddar Cheese
2 Avocados, pitted, peeled, sliced
1 cup Alfalfa Sprouts
 
Preparation:

1. Preheat oven broiler.

2. Add oil to skillet. Heat over medium low heat.

3. Sauté mushrooms and onions 2 minutes.

4. Place sourdough bread slices on baking sheet.

5. Spread ranch dressing on 4 bread slices.

6. Top with chipotle cheddar cheese and mushroom onion mixture.

7. Broil 2 minutes or until cheese melts.

8. Remove from broiler.

9. Top with avocado slices, alfalfa sprouts and remaining bread slices.

10. Serve warm.

Use your favorite cooking oil such as vegetable, corn, canola or olive oil.

Chipotle Cheddar Cheese
Use a good sharp cheddar cheese plus fresh diced chipotle or jalapeno peppers as a substitute for the choptle cheddar cheese, if unavailable.
