1. Preheat grill or grill pan to medium heat.
2. Add fresh mozzarella cheese, extra virgin olive oil, basil, chopped chives, and balsamic vinegar to blender. Blend until smooth.
3. Grill Portobello mushrooms 3 minutes per side or until tender.
4. Grill peppers until tender, about 10 minutes total, turning once.
5. Spread cheese mixture evenly on bun bottoms.
6. Top with mushrooms and red bell pepper.
7. Garnish with additional vegetables.
