Hawaiian Chicken Salad

Island style sandwich spread features pineapple and currants, with the crunch of celery and a pinch of curry powder for a hint of heat.
Ingredients -
1 (12 ounces) can White Chicken, drained
2/3 cup Regular or Fat-Free Sour Cream
1/2 cup chopped Pineapple, canned or fresh
1/2 cup chopped Celery
1/4 cup Currants, chopped
1/2 teaspoon Curry Powder (optional)
 
Preparation:

1. Combine chicken meat, sour cream, chopped pineapple, chopped celery, chopped currants.

2. Refrigerate until ready to serve.

White Chicken
This sandwich can be made with fresh chicken breast. Start with a pound of boneless, skinless, chicken breast before poaching, baking or broiling and using in this recipe.

Pineapple
Makes little sense to purchase a whole pineapple for use in this sandwich, but does make a great sandwich recipe when extra fresh pineapple is on hand.
