Alaska Salmon Salad

Flaked Alaskan salmon, tossed with yogurt, green onions, celery and lemon juice.
Ingredients -
1 (15-1/2 ounces) can Alaska Salmon, drained and flaked
1/3 cup Plain Non-Fat Yogurt
1/3 cup chopped Green Onions
1/3 cup chopped Celery
1 tablespoon Lemon Juice
Black Pepper, to taste
12 slices Bread
 
Preparation:

1. Add salmon to medium sized bowl and carefully examine salmon for any skin and bones and remove.

2. Stir in non-fat yogurt, green onions, celery, and lemon juice.

3. Season with pepper, to taste.

4. Spread salmon salad on 6 slices of bread, top with remaining 6 slices.

5. Cut sandwiches diagonally into quarters.

Alaska Salmon
Alaskan salmon is already cooked when it is canned. It can be largely void of skin and bones when packed or you will have some work to to to remove the unwanted extras. Note the can label for instructions.

When putting together cheese trays, plan on 2 to 3 ounces, of cheese per guest.
