Pita Panini

Greek style sandwich bread filled with pesto, roasted red pepper and Mozzarella cheese. Grilled to heat through and melt the Mozzarella.
Ingredients -
4 Regular Size Pitas
1/2 cup Prepared Pesto
1 (12 ounces) jar Roasted Red Peppers, drained
8 ounces shredded Part-Skim Mozzarella Cheese
 
Preparation:

1. Spray grill pan with non-stick cooking spray.

2. Split pitas. Spread rough sides with prepared pesto.

3. Top with roasted red peppers, and part-skim Mozzarella cheese.

4. Cover with remaining pit halves, smooth side up.

5. Cook 5 minutes, turn once and cook additional 5 minutes.

A nice basil or parsley pesto is indispensible to the regular sandwich maker, especially when making panini sandwiches.

A good fresh Mozzarella cheese is the best choice. Find a great deli or specialty market that makes their own cheese.
