Mediterranean Panini

Foccacia bread slices topped with basil pesto, prosciutto, Fontana cheese and artichokes. Sandwiches are pan-dried until cheese has melted.
Ingredients -
1 (11 x 9") Tomato Topped Foccacia, quartered and halved horizontally
Cooking Spray or Butter
1/4 cup Prepared Basil Pesto
8 ounces sliced Prosciutto
8 ounces thinly sliced Fontina Cheese
12 ounces Jar Marinated Artichoke Hearts, drained and chopped
 
Preparation:

1. Place grill pan on stove top. Heat over medium heat.

2. Spray cut side of tomato topped foccacia pieces and uncut side of plain pieces with cooking spray or brush with butter.

3. Place plain pieces, cut side up and spread with basil pesto.

4. Top pesto with sliced prosciutto, cheese, artichokes, and remaining bread, tomato side down.

5. Place on grill pan, cover loosely with foil. Place heavy skillet on sandwiches.

6. Cook 3 minutes, turn and cook 3 minutes.

Prosciutto i sthinly sliced Italian bacon. Readily available in most stores and butchershops. Ask the meat department manager for assistance if you can not find prosciutto in ths meat showcase.
