Double Cheese Beef Panini

Deli roast beef topped with blue cheese and provolone cheese and served on white bread. Grilled until golden brown. Served warm.
Ingredients -
1/3 cup Mayonnaise
1/4 cup crumbled Blue Cheese
2 teaspoons Prepared Horseradish
1/8 teaspoon Fresh Ground Black Pepper
1 large Sweet Onion, thinly sliced
1 tablespoon Olive Oil
8 slices White Bread
8 slices Provolone Cheese
8 slices Deli Roast Beef
2 tablespoons Butter, softened
 
Preparation:

1. Add mayonnaise, crumbled blue cheese, prepared horseradish, and fresh ground black pepper to small bowl. Se aside.

2. Add olive oil to skillet and heat over medium heat. Sauté onion until tender.

3. Spread mayonnaise mixture on one side of each slice of bread.

4. On four slices, layer one piece of cheese, roast beef, sautéed onion, and additional piece of cheese.

5. Top with 4 slices, mayonnaise side down.

6. Spread butter over both sides of sandwiches.

7. Preheat grill pan. Cook 2-3 minutes or until bread is browned and cheese is melted.
