Caprese Panini

Olive bread topped with sun dried tomato pesto, tomato slices, cheese and basil leaves. Sandwich is grilled until cheese melts.
Ingredients -
8 slices Olive Bread
melted Butter
1 cup Sun Dried Tomato Pesto
1 large Tomato, cored and thinly sliced
8 ounces Mozzarella Cheese, thinly sliced
1/2 cup Basil Leaves
 
Preparation:

1. Heat indoor grill pan on stovetop.

2. Brush one side of olive bread slices with melted butter.

3. Place 4 slices, buttered side down on cutting board, and spread 1 tablespoon sun dried pesto on each of slice.

4. Top pesto with tomato slices, mozzarella and basil.

5. Top with remaining bread slices, leaving the butter side up.

6. Place panini sandwiches on grill, top with foil, and place heavy skillet on foil to weigh on sandwiches.

7. Cook 3 minutes, turn and cook 3 minutes.

Olive Bread
Olive bread can be found in many supermarkets and bakeries. If you have a bread maker, a loaf of olive bread is easy to make.

Basil Leaves
Fresh basil can be found in most produce departments. It really makes the sandwich, so do not substitute for the basil leaves.
