1. Preheat oven to 350 F.
2. Brush one side of Italian bread slices with roasted garlic olive oil.
3. Place bread, oil side up on baking sheet.
4. Bake 10 minutes, or until bread slices are golden and crispy.
5. Turn and bake additional 6 minutes.
6. Remove bread and cool.
7. Add blue cheese dressing, dried pear halves, and sliced scallions to small bowl.
8. In separate bowl, toss diced roast beef with diced tomato, coarse salt, and fresh ground black pepper.
9. Spread crostini with dressing.
10. Top with roast beef and tomato mixture.
11. Garnish with shredded basil.
