Open Face Crab Cheddar And Avocado Sandwich

Toasted white bread slices topped with crab, avocado, tomato and cheese sauce.
Ingredients -
6 slices of Quality Light Wheat or White Bread, toasted
1 pound Crab Meat, removed from the shell
2 Ripe Avocados, sliced
Paprika
2 Medium Tomatoes
1 recipe Cheese Sauce
 
Preparation:

Sandwiches:

1. Cut bread slices diagonally.

2. Arrange four of the cut toast pieces (two full slices) on each plate so that they overlap.

3. Place avocados on toast pieces.

4. Spoon crab over the avocado.

5. Pour cheese sauce over crab and garnish with paprika and tomato slices.


Cheese Sauce:
3 tablespoons Butter, melted
3 tablespoons All-Purpose Flour
1-1/2 cups Milk
1/4 teaspoon Salt
1-1/2 cups shredded Sharp Cheddar Cheese


1. Add melted butter to small bowl.

2. Stir in flour. Gradually add milk, stirring with whisk.

3. Add cheddar cheese to milk mixture.

4. Cook in microwave until sauce is bubbly, about 1 minute. Stop occasionally to stir.

Crab meat can come in a variety of different types and packaging. Good crab meat can be purchased in the canned fish and seafood section of your supermarket. The canned product is simple to work with and readily available.

Sharp Cheddar Cheese
A mild white cheese also works very well in this sandwich. Swiss or provolone are excellent choices.
