Pork Chop Sandwich

Boneless pork chops battered and fried until crust is golden brown and chops are cooked through. Served on hamburger buns.
Ingredients -
2 cups All-Purpose Flour
2 tablespoons Sugar
1/4 teaspoon Coarse Salt
2 Eggs, beaten
1 cup Milk
Oil for frying
6 Boneless Pork Chops, trimmed and tenderized by pounding with a mallet
6 Hamburger Buns
Condiments of choice
 
Preparation:

1. In medium bowl, combine all-purpose flour, sugar, and salt.

2. Stir in eggs.

3. Add milk to the egg mixture gradually. Use hand mixer to create smooth batter.

4. Add ¼” oil to heavy skillet and heat over medium heat.

5. Rinse and pat dry pork chops. Dip into batter and cover completely. Carefully lay battered pork chops in hot oil.

6. Cook 8 to 10 minutes per side, turning occasionally, until crust is golden brown.

7. Drain chops on paper towels.

8. Serve on hamburger buns and top with condiments of choice.

Storing Pork Chops
Pork chops, if not properly wrapped can dry out. Wrap chops tightly, and store in the meat department, or coldest part of the refrigerator.

Trim Off The Pork Fat
If you choose to leave a srtip of fat around the chops before cooking them, cut the fat with a sharp knife through to the meat, and cook normally. The incisions keep the pork from curling as it cooks.
