Vera Cruz Tuna Melt

The best tuna you can buy in a can combined with onion, pimiento, and black olives. Seasoned and served on toasted bread. Topped with avocado and cheddar cheese.
Ingredients -
2 (6 ounces each) cans White Albacore Tuna in Water, drained
2 ounces jar sliced Pimientos, drained
2 tablespoons chopped Red Onions
2 tablespoons Sliced Black Olives
2 tablespoons Olive Oil
1 tablespoon Lime Juice
1 tablespoon chopped Cilantro
1 Avocado, halved, pitted, peeled and sliced
8 slices Toasted White Bread
4 slices Chipotle Cheddar Cheese
 
Preparation:

1. Preheat broiler.

2. Add white albacore tuna, sliced pimientos, chopped red onion, sliced black olives, olive oil, fresh lemon juice, and fresh cilantro to large bowl, Stir to combine.

3. Divide avocado slices among 4 toasted bread slices.

4. Top with tuna salad and chipotle cheddar cheese.

5. Broil 1 minute.

6. Top with remaining toasted white bread.
