Tuna Nicoise In Pita Pockets

A classic and delicious salad served in a whole wheat pita sound.
Ingredients -
Tuna Nicoise:
1 cup Frozen Cut Green Beans, blanched
1 (6-1/2 ounces) can Tuna In Water, drained
2 Plum Tomatoes, diced
8 Black Olives, pitted and finely chopped
2 tablespoons finely chopped Red Onion
2 tablespoons snipped Fresh Dill or minced Fresh Basil or Parsley
2 teaspoons Olive Oil
2 tablespoons Fresh Lemon Juice
1/8 teaspoon Fresh Ground Black Pepper

Sandwiches:
Lettuce Leaves
2 small (4-inch size) Whole-Wheat Pita Rounds, halved

 
Preparation:

1. Add tuna, blanched green beans, diced tomatoes, chopped olives, chopped red onion, fresh dill, olive oil, fresh lemon juice, and fresh ground black pepper to large bowl.

2. Tuck shredded lettuce into pitas. Fill with tuna salad.

Green Beans
Blanch green beans in boiling water for 1 minute. Remove to an ice bath for 1 minute. Drain and bring to room temperature naturally.
