Grilled Salmon Sandwich

Grilled salmon spread on Italian bread.
Ingredients -
8 ounces Red or Pink Salmon, (with skin and bones removed), well drained, grilled cooled and flaked
1/3 cup finely chopped Celery
2 tablespoons Sweet Pickle Relish, well drained
1/8 teaspoon Ground Pepper
1/4 cup Mayonnaise
8 slices White or Italian Bread
1 Egg, beaten
2/3 cup Milk
 
Preparation:

1. In small bowl, combine salmon, celery, sweet pickle relish, ground pepper, and mayonnaise.

2. Spread salmon salad evenly over 4 slices of bread, and place 4 slices of bread over the salmon spread.

3. Top with remaining bread slices.

4. Preheat non-stick skillet over medium heat.

5. In shallow bowl, combine egg and milk. Stir well to combine.

6. Dip sandwiches into egg mixture.

7. Place sandwiches in skillet. Brown bread slices, turn once.

8. Serve warm.

Fresh Bread
Breads made with very little oil or fat, go stale very quickly. They are truly wonderful fresh, but fall off quality wise, in a very short time frame.

Red or Pink Salmon
Canned red or pnk salmon is found with the other canned meat products like tuna, etc. A little pricey, so do yourself a favor and buy a few cans when they go on sale. Canned salmon will last for months on the shelf, when stored in normal indoor temperatures.
