Crispy Fish Fillets

Fish fillets dredged inegg and panko bread crumbs, seasoned with Dijon mustard, salt and pepper. Baked until crispy.
Ingredients -
1 tablespoon Vegetable Oil
1 Large Egg
2 teaspoons Dijon Mustard
1 cup Panko Bread Crumbs
1/4 teaspoon Coarse Salt
¼ teaspoon Fresh Ground Black Pepper
4 Catfish or Tilapia Fillets (1-1/2 pounds)
 
Preparation:

1. Preheat oven to 450 F.

2. Spread oil on rimmed baking sheet.

3. Bake in hot oven for 5 minutes.

4. In shallow dish, whisk together egg, 1-tablespoon water, Dijon mustard.

5. In separate shallow dish, combine bread crumbs, salt and pepper.

6. Coat fish in egg mixture. Dredge in bread crumb mixture, coating both sides.

7. Place breaded fish on hot baking sheet. Bake 20 minutes, turning once.

Dry Bread
To stop bread from drying out, keep in tightly wrapped. With bread that has dried out, consider toasting it for less loss of quality.

Panko Bread Crumbs
Panko bread crumbs become crunchy when cooked. They can be found in specialty stores and most supermarkets.
