Biscuit Tuna Melts

Flaked tuna mixed with onion, mayonnaise, salt, fresh ground pepper and tossed on biscuits. Topped with cheddar cheese and baked golden brown, and cheese is melted.
Ingredients -
2 (6 ounce) cans Water-Packed Tuna, well drained
1/3 cup chopped Onion
1/3 cup Mayonnaise
1/8 teaspoon Salt
1/8 teaspoon Fresh Ground Black Pepper
1 (1 pound 1.3 ounce) can Refrigerated Biscuits
4 ounces (1 cup) shredded Cheddar Cheese
Sour Cream, if desired
Chopped Tomato, if desired
Shredded Lettuce, if desired
 
Preparation:

1. Preheat oven to 350 F.

2. Spray baking sheet with non-stick spray.

3. Flake tuna into medium size bowl. Stir in onion, mayonnaise, salt and pepper.

4. Separate biscuit dough into 8 individual biscuits.

5. Roll 4 biscuits to 5-inch circles, and place on baking sheet.

6. Spoon tuna salad mixture into center of biscuits.

7. Top with cheddar cheese.

8. Roll 4 remaining biscuits into 5-inch circles.

9. Place biscuits over filling and press edges to seal.

10. Bake 18 minutes, or until golden brown.

11. Cut sandwiches in quarters. Garnish with sour cream, tomato and lettuce.

 
Sandwich Making Tip
Tuna
Select a light tuna or a solid white albacore tuna for this recipe. Either one will be suitable and delicious. You could substitute canned salmon for the tuna for variety.

Mayonnaise
USe your favorite mayonnaise brand and type for this recipe. Using a low fat mayonnaise will work just fine.
