Red Onion And Rosemary Relish

Red onion combined with garlic, balsamic vinegar, and fresh rosemary. Wonderful for use on meat and vegetable sandwiches.
Ingredients -
1 tablespoon Vegetable Oil
3 large Red Onions, peeled, cut in 3/8-inch slices, and separated into rings
4 cloves Garlic, sliced thinly
1/4 cup Balsamic Vinegar
2 teaspoons White Sugar
1/4 teaspoon Coarse Salt
1/8 teaspoon Fresh Ground Black Pepper
1/2 teaspoon minced Fresh Rosemary
 
Preparation:

1. Add vegetable oil to heavy skillet. Heat over high heat.

2. Carefully add onion to smoking hot pan.

3. Stir onions until deep brown color.

4. Stir in balsamic vinegar, continue stirring until liquid reduces and evaporates.

5. Sprinkle sugar over onion and cool 1 minute longer.

6. Remove skillet, stir in salt, pepper, and rosemary.

Fresh Rosemary
If you have to substitute dried rosemary for the fresh, use only 1/4 teaspoon dried.

You can substitute 2 teaspoons of pre-packaged minced garlic for the fresh, if necessary.
