Pulled Chicken Sandwich With Red Cabbage Slaw

Barbecue chicken sandwich served with country style cole slaw.
Ingredients -
4 cups shredded Cooked Chicken
3/4 cup Ketchup
1/3 cup Yellow Mustard
2 tablespoons Cider Vinegar

Red Cabbage Slaw:
1/2 cup Buttermilk
1 teaspoon Sugar
1/4 teaspoon Coarse Salt
1/4 teaspoon Pepper
1/2 Small Red Cabbage, cored and thinly sliced
1 Carrot, shredded
1/3 cup sliced Scallions

6 Split Hamburger Buns

 
Preparation:

1. Combine cooked chicken, ketchup, yellow mustard, and cider in saucepan.

2. Cover and cook over low heat until heat through.


Red Cabbage Slaw:
1. Combine buttermilk, sugar, coarse salt and pepper in medium bowl. Stir to blend.

2. Stir in red cabbage, carrot, and scallions.

3. Arrange hamburger buns on plates.

4. Spoon chicken mixture on hamburger bun bottoms.

5. Top with coleslaw.

6. Cover with bun tops.

7. Top with some of the slaw, cover with bun tops.

8. Serve with remaining coleslaw.

Cooked Chicken
Cover whole chicken breasts with water in saucepan. Boil 8-10 minutes or until chicken is cooked through. Allow the breasts to reast before shredding with a fork. The chicken could be broiled, baked, or grilled if desired.
