Focaccia Chicken Sandwich

Focaccia bread slices topped with cooked chicken, mozzarella cheese and broccoli florets.
Ingredients -
2 tablespoons Prepared Brown Mustard
3 Skinless, Boneless Chicken Breast Halves
2 cups shredded Mozzarella Cheese
2 cups Broccoli Florets
1 Loaf Focaccia Bread, cut in half horizontally
 
Preparation:

1. Preheat the oven to 350 F.

2. Place chicken breasts in baking dish and spread with prepared mustard.

3. Bake 40 minutes, or until cooked through. Remove from oven, and allow to cool for 10 minutes.

4. Meanwhile, bring ½” water to boil in saucepan.

5. Add broccoli, cover, cook 7 minutes, or until broccoli is crisp tender.

6. Drain broccoli in colander.

7. Shred chicken with 2 forks.

8. Top focaccia bread with shredded chicken.

9. Top chicken with broccoli and mozzarella cheese.

10. Place sandwiches on baking sheet and bake 10 minutes, or until cheese is melted.

11. Place focaccia loaf top over bottom and bake additional 5 minutes.

12. Cut into small squares to serve.
