1. Remove stem and seeds from chile and discard.
2. Chop chile finely and combine with mayonnaise and water in small bowl.
3. Spread mayonnaise mixture on top half of hoagie rolls.
4. Season chicken breasts with salt and pepper.
5. Heat large non-stick skillet over medium high heat.
6. Add chicken to skillet. Sauté 3 minutes per side.
7. Remove chicken from skillet. Top each chicken breast with cheese.
8. Arrange coleslaw mix on bottom halves of rolls.
9. Top coleslaw with chicken breast and roll tops.
10. Serve immediately.
