Chicken BLT Sandwich

Sauteed chicken breasts toped with thousand islnd dressing, lettuce, tomato and bacon.

Ingredients -
2 teaspoons Vegetable Oil
4 Boneless, Skinless Chicken Breast Halves (1-1/4 pounds)
1/4 cup Thousand Island Dressing
4 Whole Wheat Sandwich Buns, split
4 Lettuce Leaves
8 slices Tomato
4 slices Bacon, cooked, drained and broken in half
 
Preparation:

1. Heat vegetable oil in large skillet over medium high heat.

2. Sauté chicken 8 minutes, turn and sauté 8 more minutes, or until juices run clear and centers are no longer pink.

3. Spread thousand island dressing on cut sides of sandwich buns.

4. Layer sautéed chicken, lettuce leaves, tomato slices and cooked bacon on bottom halves of buns.

5. Top with bun tops and serve.

Chicken Breasts
If the chicken breasts are too thick, lay them under plastic wrap and pound them with a meat mallet to desired thickness.
