Bagels With Avocado and Smoked Salmon

A nice brunch style offering featuring avocado and smoked salmon.
Ingredients -
1 ripe Avocado, cut lengthwise around pit, halves separated, pit removed
2 tablespoons finely chopped Onion
2 teaspoons Fresh Lemon Juice
1 dash Coarse Salt
1 dash Fresh Ground Black Pepper
2 large Bagels, split horizontally, cut crosswise (8 total bagel halves)
2 ounces thinly sliced Smoked Salmon
Onion Rings, thinly sliced, optional garnish
 
Preparation:

1. Scoop avocado flesh out of avocado with tablespoon.

2. Transfer avocado to medium size bowl, and mash avocado.

3. Stir in chopped onion, fresh lemon juice, salt and pepper.

4. Spread avocado mixture onto bagel halves.

5. Top avocado with smoked salmon.

Smoked Salmon
Smoked salmon is often very salty. Sample the salmon before using it on your sandwich. Omit the salt called for in the recipe, or soak the salmon briefly in water to remove some of the excess sodium.

Choose an avocado that gives a little when pressed with your fingers. This indicates the avocado is ripe.
