1. Add 2 cups all-purpose flour, salt and yeast to large bowl. Stir to combine.
2. Add water, honey, and vegetable oil to small saucepan. Heat to 130 F.
3. Stir in cottage cheese.
4. Add cottage cheese mixture to flour mixture. Pour in egg whites.
5. Beat on low speed with electric mixer until ingredients are moistened.
6. Increase speed to medium for 3 minutes.
7. Stir in whole wheat flour, toasted wheat germ, and old fashioned oats. Use hands to form soft dough.
8. Add in additional all-purpose flour, if necessary.
9. Remove dough from bowl to floured surface.
10. Knead dough 6-8 minutes, or until elastic.
11. Butter small bowl. Butter the surface of the dough and place in bowl.
12. Cover bowl with plastic wrap. Place in a warm location for 1 hour.
13. Remove plastic wrap and punch down dough.
14. Shape dough into 2 equal size loaves.
15. Coat 2 (8 x 4 x 2-inch) loaf pans with non-stick cooking spray.
16. Place loaves in loaf pans. Cover with plastic wrap, and let rise 1 hour.
17. Preheat oven to 375 F.
18. Bake in preheat oven for 35-40 minutes.
19. Cover bread loaves with foil during final 15 minutes to prevent over browning.
