Grilled Cheese And Arugula Sandwich With Chutney

Bread slices topped with mango chutney, arugula, and brie cheese. Sandiwch is pan-fried until bread is brow2ned and cheese is melted.
Ingredients -
8 slices Black Olive Bread
1/4 cup Mango Chutney
8 Arugula Leaves
2 (6.5 oz each) packages Goat Brie Cheese, sliced
2 tablespoons Unsalted Butter
 
Preparation:

1. Preheat skillet over medium low heat.

2. Place 4 bread slices on work surface.

3. Spread chutney equally on 4 slices of bread.

4. Top chutney with arugula and brie cheese.

5. Top brie with remaining bread slices.

6. Melt butter. Brush sandwich tops with ½ butter. Turn and brush bottoms with remaining butter.

7. Place sandwiches in skillet, cook 4 minutes, turn and cook 4 additional minutes.

A good, artisan style whole wheat bread is a suitable susbtitution for the black olive bread if you can not locate it, or make it.
