1. Crack eggs into shallow bowl. Add milk and salt. Set aside.
2. Preheat grill or heavy skillet.
3. Spread 4 bread slices on one side with prepared mustard.
4. Top each slice with cheese.
5. Butter remaining 4 slices of bread with butter and place on cheese butter side down.
6. Melt 3 tablespoons butter in skillet or griddle.
7. Carefully dip sandwiches in egg mixture, coating both sides.
8. Grill over low heat until browned. Turn and brown the other sides.
9. Repeat with remaining sandwiches.
10. Serve hot.
