Blue Cheese Bacon And Pear Brunch Sandwich

Pears cooked in apple juice until soft, then placed on broiled bread slices and topped with bacon and blue cheese.
Ingredients -
1 Bosc Pear, thinly sliced
1-1/2 cups Apple Juice
6 slices Bacon, cooked crisp, drained and crumbled
2 Rosemary Focaccia Bread, or other square rolls, split
6 ounces Blue Cheese, crumbled
 
Preparation:

1. Add pear slices to skillet with apple juice.

2. Cook over medium heat about 5 minutes, or until pears have softened.

3. Remove pears to plate. Discard apple juice.

4. Preheat oven broiler.

5. Place bread on cookie sheet.

6. Arrange pear slices on bread slices.

7. Top with bacon and blue cheese.

8. Place sandwiches under broiler until cheese melts.
